Rosa’s Diner, a Latin American take on the all-day diner from Tiffany Sawyer and executive chef Francisco Pomalaza, opened in late May 2026 at 1011 K Street NW inside the Moxy Washington, DC Downtown hotel. Plan a visit soon!
A Historic Row House Becomes a Neighborhood Diner
You’ve seen it. You’ve walked by it. You’ve always wondered what was inside, and now it’s a great place to slide into a green booth and order breakfast at any hour.
Sawyer, a longtime chef and consultant for hotels and resorts, told Washingtonian writer Jenna Lee that the space, once home to the oyster bar Parlour Victoria, spoke to her as a diner right away. She saw a gap in classic all-day diners downtown and chose to elevate the format with Latin American techniques.
Green booths, a long bar with stools, and a walk-up counter fill the room. A spiral staircase leads to an upstairs Library that works as a workspace, with plans for occasional speakeasy nights.
Eggs Benedict Meets Pupusa on an All-Day Menu
One menu is served all day, so a burger at 7 AM and waffles at 7 PM are both fair game. Pomalaza’s eggs benedict sits on a monterey jack-stuffed pupusa with birria and aji amarillo chili hollandaise.
The chicken and waffles feature chicken marinated in mojo for 24 hours, served with guajillo chili maple syrup.
And, tres leches French toast was created in honor of the chef’s daughter’s ninth birthday.
Cold Brews and Latin Cocktails Round Out the Menu
The coffee program includes hazelnut and orange honey cold brews, and house-made pastries fill the case at the walk-up counter.
Cocktails include the Rosa’s Naranjilla Daiquiri, made with rum, lime juice and orange, and a Horchata Coffee Martini with vodka, horchata, vanilla and coffee. Cheers to that!
The hotel’s rooftop bar, Lucha Rosa, already leans Mexican, so Rosa’s ranges more widely across Latin America. Readers who enjoy finds like this can browse more new DC restaurant openings on The Washington Lobbyist.
