On Wednesday, April 22, Park Hyatt Washington DC invites guests to an extraordinary evening at the iconic Blue Duck Tavern — a four-course sustainable seafood feast timed perfectly to Earth Day. The Park Hyatt Masters of Food & Wine series returns for spring with a singular focus: wild-caught, sustainably sourced seafood celebrated through ingredient-driven cooking and thoughtfully paired organic wines. Director of Culinary and Food & Beverage Jean-Claude Plihon and Blue Duck Tavern Chef de Cuisine Andrew Cleverdon are leading the kitchen, with guests from the Marine Stewardship Council on hand to bring the conversation about ocean health and responsible fishing directly to the table.
A Four-Course Menu That Speaks for Itself
The evening opens at 5:30 p.m. with a cocktail reception featuring Cured Fluke with Verjus and Trout Roe, Tuna Crudo with White Sturgeon Caviar, and Haddock Fishcakes alongside Telmont Organic Champagne. Dinner begins at 6:15 p.m. with Scallops and Blue Crab-Uni Custard paired with an organic Pouilly-Fumé, followed by Sablefish in Dashi with Smoked Shoyu and a Zind-Humbrecht Riesling, then Halibut with Smoked Potato, Caviar, and a Russian River Valley Chardonnay. Dessert closes with Strawberries, Rhubarb, and Spirulina alongside Charles Orban Rosé Champagne — every course a conversation between the sea, the season, and the glass!
