Hill East Burger Hosts Three Nights of Hatch Green Chile

As a person who graduated from Gallup High School in New Mexico, I had to share this with you! Hill East Burger’s Hatch Chile Festival returns from Sep 23 – 25, 2026, bringing three nights of New Mexican flavors to Washington DC with guest chef Cable Smith of The Royal and Lulu’s Winegarden.

Cable Smith Brings Red and Green Chiles to the Menu!

The festival runs from 5 to 10 PM nightly, with Smith drawing on his New Mexican roots for a menu built around Hatch chiles. Guests can order the specials à la carte, and Hill East Burger’s regular food and beverage menus will also be available. It is an easy way to try the collaboration over dinner without committing to a tasting menu.

The Burger Shares the Spotlight With a Burrito and Stew

The Hatch Green Chile Burger combines a smoked beef patty with Hatch green chiles, the People’s Cheese, Hatch green chile Dijonnaise, shredded lettuce, pickle, and tomato. The Hatch Red Chile Carne Adovada Burrito wraps red chile-braised pork and white cheddar in a flour tortilla. A Hatch Green Chile Stew adds pork butt and potato, served with flour tortillas. The restaurant’s Instagram carousel gives a closer look at all three dishes.

Limited reservations are available through Hill East Burger’s booking page, with space also held for walk-ins. Takeout and delivery will be offered through the restaurant’s ordering page, where guests can order ahead on the day of service. The team notes that takeout may pause during peak hours, so check availability before counting on a pickup order.
