Blue Duck Tavern is offering a bourbon-and-bone-marrow pairing in its lounge through December 31, 2026. The Park Hyatt Washington restaurant’s wood-oven dish anchors a choice of three bourbons, giving diners a focused way to explore a familiar American spirit alongside a savory starter.
A Signature Dish Anchors the Pairing
The current lounge menu lists wood oven-roasted bone marrow with onion bordelaise, pink peppercorn and rye crumble, sourced from Creekstone in Kansas.
The hotel credits Chef de Cuisine Andrew Cleverdon with the dish and Operations Manager Peteryne Jallah with selecting the pairings. The format works for diners who want a specific food-and-drink combination without committing to a multi-course event.
Three Bourbons Keep the Choice Manageable
Just think: Four Roses Single Barrel, Woodford Reserve and Angel’s Envy, available in one- or two-ounce pours. Listed prices run from $10 to $12 for one ounce and $20 to $24 for two. Ask the team which selection best matches the flavors you enjoy, and taste the food before and after a sip to make the comparison useful.
The pairing is offered nightly in the lounge through the end of 2026.
The Lounge Offers a Different Pace from Dinner
This offering is specific to the lounge, so mention it when arranging a visit instead of assuming a dining-room reservation covers the same experience. The wider lounge menu also includes oysters, duck wings, salads and sandwiches.
