United Brings DC Chefs to Polaris Flights From Dulles

A flight from Washington Dulles now begins with a taste of DC.

DC Chefs Bring Local Flavor to the Sky

United Airlines is serving new dishes from DC chefs Isabel Coss and Matt Conroy on select United Polaris international business class flights departing Washington Dulles. The collaboration with Chef’s Table connects the acclaimed chefs behind Lutèce, Pascual and Maison Bar À Vins with travelers heading overseas.

Coss and Conroy combine French technique, Mexican influences and seasonal ingredients in meals developed for service at 35,000 feet. DC now joins Los Angeles, Chicago, London, Tokyo, São Paulo and other major food cities represented in the United and Chef’s Table collaboration.

The First Menu Makes a Strong DC Statement

The opening DC menu starts with melon and burrata salad prepared with chorizo vinaigrette and opal basil. A quinoa salad follows with currants, butternut squash, kale and banyuls vinaigrette. The entrée brings braised chicken breast in vadouvan coconut curry. It is a thoughtful progression with bright flavors, familiar ingredients and enough personality to represent the chefs’ celebrated DC restaurants.

The first dishes has launched and continue through September 2026. Another lineup arrives in October, followed by seasonal rotations into 2027. This is airline food with a clear sense of place!

Nearly Two Dozen International Routes Get the Menu

The dishes are available on nearly two dozen eligible United Polaris flights serving lunch or dinner from Washington Dulles. Destinations include Cape Town, Brussels, Lagos, London, Rome, Tokyo and São Paulo. Travelers can review and preorder eligible Chef’s Table meals through United Polaris or the United app beginning five days before departure and ending 24 hours before departure.

United is also adding original Chef’s Table programming to its inflight entertainment system, allowing passengers to see how the chefs developed and tested meals for air travel. Choose early and board hungry!
