According to the restaurant’s latest announcement, Morishita’s taco starts with pork shoulder marinated in pear, sake kasu, and tamari. Miso nori brown butter adds richness, while daikon, salted plum ponzu, togarashi, shiso, scallion, and lemon finish the dish. For diners who follow her work at Perry’s, the collaboration offers a different setting for her approach to Japanese flavors.
The Takeover Continues a Series of DC Chef Collaborations
The Popal family and chefs Matt Conroy and Isabel Coss created Trompo Takeover to invite other chefs to contribute a signature taco for one evening. Past guests have included Danny Lee, Fernando González, Rob Rubba, and Tim Ma.
