Two Chefs, One Table, Nine Unforgettable Courses

On Wednesday, April 8th at 6:30 p.m., Cordelia Fishbar on Morse Street NE (Union Market DC) becomes the setting for one of the most anticipated collaborative dining events of the season. Executive Chef Josh Hunt of Cordelia is welcoming Sushi Chef Jungil Yang from sister restaurant The Hamilton for a one-night-only, nine-course omakase tasting dinner — a singular evening where Japanese precision meets wood-fired technique. This is not a regular reservation. This is a moment.

Where Japanese Omakase Meets Charcoal-Fired Seafood

The menu reads like a love letter to the season. Guests will move through a welcome tea into Kani Sunomono with pickled cucumber and seaweed, Madai with ponzu jelly, Japanese Scallop with yuzu kosho, and Sakura Masu — cherry blossom salmon with lime zest named for the very blooms outside the window. From there, Botan Ebi arrives with uni and a fried head, followed by Aji with ginger and chives, Toro crowned with caviar, and Wagyu with truffle. The finale: Anago sea eel and Miso Black Cod with Japanese hollandaise and ikura. Every single course earns its place!
