Chef Daniel Perron Brings Capitol Hill Pedigree to Historic Downtown Fredericksburg

An hour and a half south of DC — nearly midpoint to Richmond — Locavore is doing something rare: serious farm-to-table New American cooking in a historic downtown setting, without the pretension. Chef-Owner Daniel Perron spent years at the top of Washington’s dining scene, most recently as Executive Chef at Charlie Palmer Steak on Capitol Hill, before that earning a Michelin Bib Gourmand and Washingtonian Top 100 nod at Whaley’s, and landing Trummer’s at number four in Northern Virginia Magazine. He trained under James Beard Award winner Fabio Trabocchi at Fiola Mare and honed his craft at Blue Duck Tavern inside the Park Hyatt. The result in Fredericksburg is a focused, seasonal menu built around Mid-Atlantic farms and peak-season ingredients that actually change when the season does.

Rooftop Cocktails, Prix Fixe Dinners, and a Menu Worth Studying

The March dinner menu tells you everything: Barnegat Light Golden Tilefish over Anson Mills Carolina Gold Rice, Autumn Olive Farm Pork Loin with strawberry gochujang, and a Charity Hill Farm Strip Loin with coffee rub and carrot top chimichurri. The Chef’s Seasonal Prix Fixe runs three courses for $48, Sunday through Thursday. Upstairs, Folklore — a Charleston-inspired rooftop bar — serves Southern bites and craft cocktails on a first-come, first-served basis.
