Washington, D.C. (February 12, 2013) – Daikaya, one of DC’s most anticipated restaurant openings, is set to open its doors in April 2013. Partners Daisuke Utagawa, Yama Jewayni and Katsuya Fukushima (also the executive chef) have teamed up to create tavern-style Japanese fare inspired by Tokyo’s high density areas, in which different restaurants are stacked on top of each other.

It is a casual spot for Sapporo-style ramen served in the 40-seat restaurant on the ground floor, and upstairs will house the 90-seat izakaya. Daikaya will open its doors to the first floor ramen shop on Thursday, February 14th at 5 PM and serve until 11PM in Washington, DC’s Chinatown. During opening week only dinner will be served, before expanding hours to begin lunch service.
Four different types of ramen will be served in the first floor shop: miso, shio (salt), shoyu (soy) and vegan. The noodles served at Daikaya are made to the partners’ specification in Sapporo and are aged before shipped to restaurant.
An izakaya is a Japanese tavern, with people frequenting it from early evenings to, dinner time, and late night fun. Daikaya’s second floor izakaya will open approximately one month after the ramen shop.
Designer Brian Miller of Edit drew his design inspiration for Daikaya from his visit to Japan as a member of Daikaya team. The ground floor ramen area is small, bright, and lively. Visible even from the street, the cooking line and chefs are the heart of this space, with customers at the counter seats getting a prime view of the boiling noodles and wok cooking. The palette is simple and clean, with oak seating and ceiling, raked plaster walls, and graphic teal and citron tiles framing the stainless steel cooking line.
The interior of the izakaya is a more layered space, with Japanese tour bills of the partners’ favorite bands, Japanese release movie posters, and old beer and whiskey ads hanging over custom wallpaper with food scenes from popular manga. The bar is at the center of the room, flanked by rope-divided booths, banquettes, drink rails, and bar tables. An eclectic mix of modern and vintage pendant lights and chairs enliven the izakaya’s backdrop of wood floors and kiln-fired glazed mosaic tiles.
