Did You Know?

The Arugula and Kale Salad are both greens that are high in Vitamin C and Vitamin A, which are important for maintaining the body’s immune system.  Kale is one of the most nutrient dense foods on the planet. One cup of raw kale has 200% of the RDI Vitamin C, 300% Vitamin A, and 1,000% of Vitamin K, along with large amounts of Vitamin B6, potassium, calcium, magnesium, copper, and manganese. The shaved fennel and carrots add more nutritional diversity to the dish.

Harvest Grain Bowl

Blue Duck Tavern’s Harvest Grain Bowl is a very nutritious element on the featured lunch as it contains haricots verts, farro, corn, cucumber, tomato, and quinoa.

Quinoa is another super food.  It is high in fiber, magnesium, Vitamin B, iron, potassium, calcium, phosphorus, and Vitamin E.  It also a good protein source containing all nine essential amino acids making this food a complete protein that is also great for vegetarians.  The grain bowl contains hummus made with garbanzo beans and farro for additional nutrients.

Both the Crudo serving at lunch combined with the fish or chicken protein options in the Harvest Grain Bowl, add omega-3 fatty acids to the meal. These proteins are important for heart, brain, and gut health.

“Maintaining a healthy immune system is more than an individual’s Vitamin C intake being at a high level,” explains Cerione. “Our team at Blue Duck Tavern believe a well-rounded diet containing the nutrient rich items contained in this menu can help boost one’s immune system. We want to provide our guests with a safe dining environment. as well as featuring healthy options that are perfect for summer.”
