Fairmont Hotel Washington, DC Welcomes AJ Thalakkat as Executive Pastry Chef

Fairmont Washington, D.C., Georgetown has recently named Ashish Thalakkat (AJ) Executive Pastry Chef for the 413-room luxury hotel. The announcement was made by Regional Vice President and General Manager Mark Huntley

With over 22 years of culinary experience, Chef Thalakkat joins Fairmont Washington, D.C., Georgetown from Claremont Club and Spa where he created signature desserts and other confections beginning in 2018.

From February 2014 until February 2018, he was the executive pastry chef for Fairmont Empress, Victoria, British Columbia, Canada. During this time, he developed four signature chocolates exclusively for Fairmont at the Coca Barry Chocolate Laboratory in France.

Chef Thalakkat was the executive pastry chef at the Grand Hyatt Muscat in Muscat Oman from August of 2011 until February 2014 and pastry chef for the Old Mill Inn & Spa in Toronto, Canada from June 2006 until May 20ll. He also taught advanced bakery and pastry courses, part time, at Humber College, North Campus, Toronto, Canada.

Previous experience as a pastry chef includes the Hyatt Regency in Mumbai, India and the Leela Goa, in India. He held sous chef and chef de partie positions at Hyatt Regency Kolkata, India, Grand Hyatt Dubai, UAE and Grand Hyatt Muscat, Oman from 1998 until 2006.

A graduate of the Institute of Hotel Management and Catering Technology in India, he holds a diploma in hotel management, catering technology and applied nutrition, with an academic evaluation conducted by the Trusforte Corporation in hotel & restaurant management.

Chef Thalakkat has competed in various high-level showpiece competitions including the Canadian National Competition, Emirates Salon Culinaire, and Great Indian Culinary Challenge. His favorite medium is chocolate, and he often takes inspiration from nature to create sculptures that showcase a versatility of textures and flavors.

A native of Scarborough, Ontario, Chef Thalakkat’s love for science and art are what originally drew him into the challenging world of pastry and continue to drive his passion. Outside of work, he enjoys pursuing hobbies of art and photography.
