Spike Mendelsohn Makes Mexican Latkes For Hanukkah

Latkes – fried potato pancakes with flour and egg – are a central part of Hanukkah’s culinary landscape. And our local celebrity chef has a new spin on the traditional recipe.

While traditional latkes err on the side of basic and bland, Chef Spike Mendelsohn is creating a modern interpretation that is packed with flavor and a little heat. Inspired by the recent opening of his newest Washington DC restaurant, Santa Rosa Taqueria, Chef Spike has created a recipe for Mexican Latkes that you can easily make at home.

Spike Mendelsohn’s Mexican Potato Latkes:
What you need: 3 cups russet potatoes * 2 tablespoons onion, diced * 1 large jalapeño, deseeded and diced * 2 corn stalks * 1 clove garlic, minced * 2 eggs * 2 tablespoons flour * 1 teaspoon salt * ½ cup vegetable oil

BONUS! Smooth Guacamole:
3 large ripe Hass avocados, halved, pitted, and scooped out * 2 teaspoon fresh lime juice * 1 tablespoons mayonnaise * 1 tablespoons finely minced cilantro * 1/4 teaspoon Kosher salt * Fresh cracked black pepper, to taste * Extra-virgin olive oil, for drizzling

1. Put corn stocks in a pot of water, bring to a boil, until color changes to bright yellow. Drain and cool. Remove from stock. * 2. After peeling and shredding potatoes wring out potatoes with a cheesecloth or towel, removing all moisture. * 3. Mix potatoes, onion, jalapeño, garlic, corn, eggs, corn, flour and salt together in a large bowl. * 4. Heat oil in a large pan over medium high heat until the oil is hot. * 5. Drop large spoonfuls of the potato mixture into the oil in batches, and flatten them down to form ½ inch patties. * 6. Brown on one side, about 2 minutes, and then flip and brown the other. * 7. Place on paper towels to absorb any excess oil and sprinkle with more salt. * 8. Serve hot with smooth guacamole sauce, cilantro and sour cream.

In a bowl, mash 3 avocados with a potato masher until smooth. Stir in the lime juice, mayonnaise, cilantro, salt and pepper. Put guacamole in serving dish and drizzle with olive oil. Serve immediately.
